Marks a document template as deleted and updates onboarding steps if no active documents remain.

delete https://api.worklio.com/wep/companies/{companyId}/onboarding/start/{id}/documents/{documentId}

This is a soft delete operation. The document is marked as deleted but not physically removed.
If this was the last active document template, the onboarding workflow may be updated accordingly.
